Plastic sous vide pouches have long been a thorn in the side of evironmentally minded chefs looking to reduce their plastic use. Now, Sous Vide Tools claims to have come up with a solution, the first plastic-free, compostable vacuum pouches. Sous vide cooking methods can help preserve ingredients for longer but until now the process has inevitably involved single-use plastic. The new invention is made from rice, potatoes & corn and can be thrown in the food waste compost bin, taking six months to disintegrate. Whilst the solution sounds positive, re-usable alternatives do already exist and with the Sustainapouch costing approximately four times as much as plastic pouches we’ll have to wait and see if chefs decide it’s worth the extra cost.
