Last week we were lucky enough to attend the latest of the Regional Finals for the San Pellegrino Young Chef Award where we’re thrilled to be judging the Social Responsibility award. This is designed to showcase those chefs who are demonstrating that food is best when it’s the result of socially responsible practises. The winner of the North Western Europe round, Kitano Yurika did this by focussing on local ingredients, highlighting the importance of animal welfare as well as making the most of often discarded ingredients such as wonky vegetables, all of this without sacrificing presentation or most importantly taste. With a series of regional finals ahead of next years final in Milan, watch this space for more socially responsible dishes.
