We know that carbon labelling is on the increase. There is evidence of this within the restaurant sector too with two US brands joining the race. Bakery chain, Panera Bread has adopted a labeldeveloped by the World Resources Institute to indicate dishes on the menu that are in line with the WRIs recommended dietary carbon footprint, a figure that is 38% smaller than the US average footprint. The Cool Food Meal badge is designed to make it easy for consumers to make low-carbon choices. Quickly following this, Chipotle has introduced a footprinting tool that shows the impact of each specific menu choice across five envioronmental metrics: carbon, water, soil health, organic land supported and antibiotics avoided. Whilst the tool isn’t a perfect, every Chipotle digital order will now include a foodprint report on the receipt, showing the efforts in place to connect individual orders to environmental metrics.
