Last week, Asia’s 50 Best Restaurants 2020 were announced (via an online ceremony). Whilst restaurants the world over face unprecedented challenges, we were still glad to be able to recognise those who are taking the long-term view, thinking sustainably and helping to do their bit towards creating a more sustainable food system. One of these champions is Richard Ekkebus ofAmber, Hong Kong, which won the Sustainable Restaurant Award at Asia’s 50 Best Restaurants. Part of Amber’s philosophy is ‘respectful of tradition yet dedicated to innovation’ a philosophy that we believe puts sustainability at the heart of the business. Amber supports trusted, local suppliers through shorter, more transparent supply chains, and is forward looking in terms of how it can minimise its environmental impact.
